Rabbit stew

 

  • 400 g rabbit meat (saddle)
  • 600 ml vegetable broth
  • 200 ml white dry wine
  • 1 onion
  • 3 garlic cloves
  • 1 small chilli pepper
  • 2 tablespoons sarepska mustard
  • 1 tablespoon honey

 

  • 2 tablespoons cream
  • 3 tablespoons oil for frying
  • 3 fresh rosemary twigs
  • 2 fresh thyme twigs
  • salt

Preparation

Rinse the rabbit meat and cut it into small pieces (goulash-size). Peel the onion and garlic, then cut the onion into smaller pieces.
Put the onion, deseeded chilli peppers and garlic in the mixing bowl and chop at speed 5 for 6 seconds. Add the oil and fry at speed 1, at a temperature of 120ºC for 2 minutes.
Put the attachment on the knives. Pour the wine and broth into the mixing bowl, add the mustard, honey and seasoning, then cook at speed 1, at a temperature of 100ºC, for 3 minutes. Place the rabbit meat in the sauce and cook at speed 2, at a temperature of 100ºC for 40 minutes. At the end of cooking add the cream, then season the stew to taste, as required.
